Stanglwirt has stood under the Wilder Kaiser for more than four hundred years and has been in the same family since 1722. The order of the words matters here. It is an organic farm of over a hundred hectares with a five-star hotel built into it, not a hotel that keeps a few cows. Most of the meat, charcuterie, fish, dairy and bread on the table comes from the property's own production, and the herd's milk goes straight into house-made cheese, butter and yoghurt. All the water in the house, and in the twelve thousand square metres of wellness world, comes from the Kaiser spring on the land, warmed by ground heat and sun through a heat pump rather than by a boiler.

What the building is made of

The material record here is stronger than almost anything in this index. Timber bricks bedded in lime mortar rather than cement. Timber beam ceilings instead of steel decks. Solid wood furniture only, in Swiss stone pine, on floors of local mountain larch. Bed linen, upholstery and towels in organic cotton and linen, carpets in pure new wool, and every mattress in the house filled with horsehair and sheep's wool under a named product, Das grüne Bett.
